Evey one that stayed with it had great results. Congratulations next Challenge will be coming in the next month.
The rules are very simple, the start day will be Jan. 9 (Saturday). One the 9th we will do the WOD, tape, weigh, and take pictures of everyone that is in the challenge. The Challenge will be 3 months long. There will be no food journal, its all on you. There is a $25 buy in. THE PRIZE: will be 1 year free at Bayou City, and $$$.
How to win, at the end of the 3 months, we will retake all pictures, weigh, tape, and re-due WOD. All the coaches will be judges.
We will all meet on the 9th to go over all the rules, how the winner will be chosen, and answer any questions.
This will be a good start for the New Year, a way to help people get healthier. If you commit to this you will have great results. You will not be alone through this there will be a lot of people doing it. Let’s do it together lets help each other become the best that we can be.

Good Recipes from the Performance Menu
Paleo Pizza
Kaite and myself, made a Paleo Pizza this past weekend and it turned out pretty good.
This is what we used: (for 2 – 3 People)
2 Cups Almond Flour
1/3 Cup Chopped Pecans
6 Egg Whites
2 Cups Organic Marinara Sauce
3 tsp Olive Oil
here its on you, and what veggies or meat you like we used:
1 & half Cups of chopped mushrooms
1/2 Cup Bell Pepper
1/2 Onion
Chopped Garlic
2 Italian Sausage links
Preheat oven to 350 degrees.
Mix Almond Flour, Pecans, Egg Whites in a bowel until batter is moist.
Then spread on a pane. you don’t want the crust thick (its to much) so make sure the batter is 1/4 inch or smaller.
Then put pane in the over for 5-10 min’s. you don’t want to cook to long this is just a pre cook for a crispy crust.
While in the oven, cook your Sausage (remember don’t over do it because its going to cook longer in the over)
When sausage is cooked drop in your veggies to cook, just enough for the veggies to soften
Then put Marinara Sauce on the crust, and put meat and veggies on top
Then put in oven and cook 15 – 20 min’s
Cook time depends on how cooked everything is before the last oven time.

Here’s the recipe for Seafood Chili:
1.5 cups chopped onion
3 garlic cloves, peeled and chopped
1 jalapeno pepper, seeded and chopped
1/2 red bell pepper, seeded and chopped
1/2 green pepper, seeded and chopped
1 Tbsp chili powder
1/2 Tbsp oregano
1 tsp ground cumin
1/2 tsp ground corriander
1/2 Tbsp extra virgin olive oil
1 can (14 oz) diced tomatoes with juice
1 can (6oz) chopped clams drained, 1/2 cup juice reserved
1 Tbsp cornmeal
3/4 lb large shrimp peeled and deveined
3/4 lb large sea scallops
1/2 lb halibut (or other firm whitefish- I used Orange Roughy) cut into 1-inch pieces
3/4 lb mussels
Combine onions, garlic, jalapeno pepper, red pepper, green pepper, chili powder, oregano, cumin, and corriander with the olive oil in the crockpot, add the diced tomatoes and 1/2 cup clam juice; cover and cook on low for 4 hours. Turn heat to high and add the cornmeal; cook for 15 minutes. Add chopped clams, shrimp scallops, and halibut, stir gently and put mussels on top. Cook on high until shrimp turn pink (about 15-30 minutes). You can garnish with fresh chopped cilantro.

Guys if you want something quick,easy, and different to eat, try my little invention i just put together for lunch…i’ll call it
Sphagetti squash, meat, avocado goodness,with a dash of salsa
so i had left over sphagetti squash, left over ground beef,
mixed 3 tbl of avo with the ground beef, then mixed in the squash
heated it all up and added a little salsa to the mix, about 1/4 cup…if that.
it was pretty tasty

Paleo brownies
1 C agave syrup
1 ½ C almond flour
1 T vanilla
½ C chopped pecans
1 tsp. baking soda
2 eggs
½ C cocoa
bake on 350, set time for 10 minutes, see where its at, keep checking every 5 minutes depending on oven you have
These are REALLY good!!!! ENJOY
